Our mission is to bring local and sustainable food to Denton. We refuse to compromise on quality, so we source our fresh ingredients from local farmers' markets & suppliers whenever possible. No matter the time of year, you can be sure you're eating the best local food of the season.

Caroline's Sidebar is a unique space in Denton's old doctor's office. We will feature a full bar, draft beer, small plates, and Sourdough personal pizzas in an informal atmosphere.

Caroline's Market will open in 2023 in the old red carriage house behind the restaurant as a local farmers market & food hub. Eastern Shore farmers & suppliers can aggregate their products in this central Denton location, making local products easily accessible to our community.

Chef Adam Flood has worked in kitchens since he was 15 years old. He graduated from Le Cordon Bleu in Las Vegas, NV in 2005 and he has worked at multiple James Beard award-winning restaurants, including Radius, in Boston, MA, The White Barn Inn in Kennebunkport, ME, and Fore Street in Portland, ME. Most recently, he was the Executive Chef at Grace in Portland, ME - a church that was built in the 1800s and remodeled into one the most romantic restaurants in the country (according to Travel & Leisure magazine). Adam was there for 5 years serving modern American cuisine with classic French techniques.
Chef Adam Flood was born on the Delmarva Peninsula, but has lived in Maine since age 10. He has frequently returned to the Eastern Shore his entire life, vacationing in Sherwood at a house that has been in his family for almost 100 years and where his grandfather still lives to the day. He got Married 5 years ago to his beautiful French-Canadian wife Nancy in St. Michaels.
Adam is thrilled to be returning to his roots on the Eastern Shore and is very excited to use the bounty of the farms and seas that surround the area. He has a real passion for creating beautiful food that tastes even better and makes people smile. The Team at Caroline’s is excited to welcome Adam to the team!
Editor’s note: Nancy Minahan founded the Denton Restaurant Group and with some collaboration of friends and family, came up with the name “Caroline’s” to ground and place the concept. We had many wonderful candidates for Chef and Adam stood out. It was not until he made it to the top of the list that we learned his mother’s name is Caroline, and his wife's name is Nancy.
